Corn Frittrers (part 1)



My grandmother's recipe for corn fritters made with a can of cream style corn.



My corn fritters served with slices of Maple River Ham and my home made Maple syrup from our trees almost makes this breakfast Canadian !


You will need a can of cream style corn, egg, 1/3 cup milk, 1/3 cup flour, dash of salt, 1 heaping teaspoon baking powder, and about 3/4 cup of cracker crumbs.



Empty the can of corn in your mixing bowl. Break the egg into the empty can and beat it before dumping into corn.



Rinse your corn can with 1/3 cup milk and blend together your wet ingredients.



Add the baking powder, salt and if you want a tablespoon of sugar to the flour mixing them well.



Crush about 3/4 cup of crackers with a rolling pin.



Dump them into the wet mix.



Add the dry flour mix on top of the cracker crumbs before stirring.

Soooo many pictures it takes two blogs to fit the entire recipe in... My day has just been a rat race to get things done with the snowy start.
