Dismal Day (part I )

Ya know it is a dismal day in Iowa when it is cloudy 18 F ~~~ -7C with a freezing drizzle coating everything in a glaze of ice.

It is so Dismal JD asked for cabbage soup! That's like pretending the DDR (East Germany) was a Theme Park !

Cabbage soup was a working man's soup designed to fill him up at a low cost. Normally you'd boil a bunch of beef soup bones, but thanks to the 21st century you don't get any soup bones so you resort to Jamison Beef Soup base.

Put about 4-5 teaspoons of the soup base into about 5cups of water over medium high heat.

Sliver half a medium onion then add it to the beef soup base.

Finely chop about 1/4 of a head of green cabbage then add that to the soup base.

You want to season the soup with Basil, oregano, and fennel.

Also add Black pepper, Paprika, and garlic powder.

That sounds like a mighty fine soup for JD, the working man. Like you said, it must be a cold and dismal day if he asked for that.
I had leftover ham/vegetable soup for lunch and some delicious and tender Ukrainian cabbage rolls for supper. Mmm, hmmm. Good.

The temp dropped through out the day and is now -4F, NW 10, partly cloudy. This morning we had 1.25" of snow with a lot of blowing snow and drifting snow. Right on schedule at 10 am, I got a delivery of the Christmas hamper from the County Food Bank. # boxes full of everything I needed including a 12.5 lb turkey cake mixes, cooking oil, toiletries, kitchen cleaners, etc, etc. I was so happy I cried while putting it all away. I don't need to go shopping for anything.

Gawd that is an excellent Christmas present! Our gas guy gave us a HUGE 20 lb turkey... I may make up a dinner for the guys to get rid of the turkey.... We couldn't begin to eat that much!

Pretty easy to make STR and it bulges with flavor!

Cabbage soup is a dieters soup if you are trying to lose weight. When I make it I add onion, green pepper, carrot and celery. I also add diced tomatoes and chicken broth. It is a very hearty and wholesome soup. You could also substitute onion soup mix for the onion and chicken broth although there is quite a bit of sodium in the onion soup mix.

I've never used a chicken base for it ! I will give it a try next time. I buy about as many onions as I do potatoes around here and there's always a head of cabbage too.

Actually.... YES ! It is one of my favorite winter soups. I have to make a larger batch when we have it.
