God'sWork via Beans&Rice

I spent the past few months in Washington DC trying to save our rivers and health care. It created a setback with my financial realities so this month I stocked up on beans and rice. I have plenty of spices and canned veggies so it works out just fine for me.

So this afternoon, I get a knock on the door. It's my Jamaican buddy. He always shows up unannounced at the worse possible time. I slept until noon and I was still in my jammies. Dang! If he was looking for a bootie call, he needs to come by when the house is not a mess, the bed made and I am wearing something bs*e?x5y. Nevertheless, we do have the MOST interesting conversations.

We sat out on the porch and talked about various subjects. We talked about White Privilege. I offered to wash his feet and he laughed. "What do I care about white privilege, we won the revolt in Jamaica." He came to the United States for better opportunities and it happened for him. We talked about his Church and my Quaker Meeting. He sings in the church choir, I was kicked out of a church choir but my singing is not a concern for the Quakers. We talked about Grandchildren. He has a bunch of them - I have one.

One of our favorite topics is cooking. He was describing how he cooks beans and rice. He cooks them together with coconut milk and uses curry. I started asking him questions in detail mentioning that I cook the beans in a crockpot and rice in a rice cooker. I put them in zip lock bags and throw them in the freezer Voila! Breakfast, Lunch & Dinners for the week. Do you cook them with chicken he asked. Not really So he asked, "would you like a steak?"

I am not a vegetarian or a greenie but I honestly have everything I need. I don't NEED a steak. His logic was that if he gives God blesses him. So Fine, I'll say Thank You. He drove over to Food Lion and came back with a steak. He told me that he was doing God's work. Some folks might disagree, I was Washington DC trying to deal with the health care issue which could also be God's work.

I offered to cook the steak and share it with him but he had plans to visit his grandkids and cook for them.

Looks yummy!

I haven't had beans and rice in a long time. A gal I met through SFF introduced me to it. Until then I had never heard of it.

Guess it is about time again.

Do I see greens on that plate? MMMMM!

Heard a radio show on Sunday .(The Splendid Table) with a discussion of all kinds of beans including special exotic varieties, and how to cook them. I got s hungry thinking about them.

It works out great especially since I finally learned how to make injera bread. I use either teff or sorghum.

I like beans and rice just fine, but this time of year I like to eat out of the garden and Farmer's Markets and Driveway Honesty Farm stands.......Fresh Farm eggs poached to perfection served on a slice of beef-steak tomato and steamed greens and a cob of corn.........and fruit....lots of fruit.....I just picked raspberries.....ate them as I picked while the cat weaved in and out of my bare legs.......so much gratitude for the bounty of the Earth.

I had not heard of beans and rice until some of my girls went to Costa Rica and Guatemala and experienced them.
As for the condition of your pantry right now, some of our most favorite dishes grew out of lean larder and using the few things we had on hand...... then embellished them as circumstances improved.
