Presidental Pardon of the Turkey

The Presidential Pardon of the Turkey is a tradition that started with the Party of Lincoln!!! It has been my observation that all the turkeys are white. I gOOgle researched the reason why.

Our Founding Fathers ate Wild Turkeys with colored feathers of iridescent red, green, copper, and bronze. If things went Ben Franklin's way, the turkey would have been the National Bird and I suspect that it would not be a holiday cuisine.

This wild turkey also know as the Heritage Turkey is not what can be found at the local supermarket. The Broad Breasted White is the only turkey breed still widely raised for the market, and it is a troubled creature. The colors have been bred away by the turkey industry, because feather buds (the pin feathers) are less noticeable under the skin of a plucked bird if they are white. With short legs and wide breasts -- the better to serve up white meat

Broad Breasted White turkeys do not fly and can't even reproduce on their own. Carrots and Pea will be going to Virginia Tech to live out the rest of their lives and others have gone to Disney World. They do not have a long life expectancy even with the pardon. They were created and bred for consumption. Sad!!!

No turkey, not even the breast, in this house. They are all injected with a sodium solution!

Somehow, I managed to acquire a 17 pound turkey which is not going to fit in my instant pot. My plan is to thaw it, cut it up and cook much as I can in the IP. It will take more than one venture. I'll make lots of turkey salad and and sandwiches, It will be turkey everything for the rest of November and quite a bit of December. Those bones will make a marvelous broth.

Unless we find one straight from the farmer, it is injected with the flavor enhancers, sodium, and that's even the ones called "fresh". One meal of it isn't so bad, but for the two of us, there would be several meals of left overs and that is a no-no for Joe.
With his CHF, a sodium maximum of 1,500 mg a day is pretty limiting. We try to keep to those restrictions at home because we know that when we travel or eat out, he goes way over it.

This reminds me of a true story..................... my oldest daughter was dating this really sweet guy, who had a habit of exaggeration. One Thanksgiving, he told her that his mother was fixing their 25 pound turkey in their microwave! We still laugh about it.

I was actually very surprised to find that turkeys are injected with those solutions...... and I looked at several brands, both "fresh" and frozen. I didn't know that about the "fresh" ones though...... and I didn't think to look at the dates, but I didn't see any marked "never frozen".
Turkeys aren't the only injected meat either. Our local IGA store only carries Hormel brand pork and it is all is heavily loaded with sodium.
I guess I am also thankful for labels on food!
