My Favorite Fruitcake Recipe


Dear Amythest, a promise is a promise. And to all my dear SFF friends.
I like to invite at least two or three friends over to come and help me with all the work that it implies in the making of the fruitcakes. We all have lots of fun. They all go home with one of the fruitcakes and the recipe.

My Favorite Fruitcake

2 lbs. candied red cherries
1 lbs. candied green cherries
1 lb. citron or 1 lb of candied cactus fruit called visnaga.
(You may be able to find it at a supermarket where they sell
Mexican foods)
1 lb. candied orange peel (homemade if possible)
1 lb. candied lime peel or lemon peel (homemade if possible)
2 lbs pitted dates
2 lbs golden raisins
1 lb. dark raisins
1 lb. currants
2 lbs. shelled pecans
1 lb. candied pineapple
1 lb. dried apples
1 lb. dried apricots
1 lb. half almonds
2 lbs. butter
2 lbs. brown sugar
1 dz. of eggs
3 tablespoons of vanilla
8 cups of all purpose flour
3 teaspoons of ground cinnamon
1 teaspoon of allspice
Juice of three oranges
2 cups of white grape juice
Juice of one large lemon
2 teaspoons of baking soda
4 teaspoons of baking powder
1 teaspoon of nutmeg

Cut all fruit into small pieces and chop nuts
Cream the butter and the sugar, and one by one add the eggs. Add the juice of the lemon, the orange juice and the white grape juice.
Re-sift the flour, the baking powder, and soda with the nutmeg, cinnamon, and nutmeg. Stir all fruit in the mixture, and add the vanilla.
Grease 6 to 8 9x5 in. loaf pans and sprinkle flour on all sides.
Bake at 250 degrees for about 30 to 35 minutes until toothpick comes out clean. Once you take the fruitcakes out of the pans, use two cups of your favorite rum and add to it four tablespoons of brown sugar and heat it at low heat on the stove in a small pan. Pour the rum on the fruitcakes. Brush lightly with corn syrup and add fruit to decorate. Allow the fruitcakes to cool down and wrap with foil paper. Store them away for at least two weeks until you unwrap to use. You can add more rum if you wish to make the fruitcakes a bit more stronger in wine.

I hope you like this recipe. I have really seen that all of my friends with whom I share my fruitcakes do like them very much. Please let me know if you use this recipe and I do not mind at all if you make any changes to it to make it better. ENJOY!!
