An assortment of recipes gathered from my travels...


Inspiration for this goes to Gracefuldoe and her cry the other evening that she did not know what to do with her Breasts.

Normally one uses Chicken thighs but it works just as well for Breasts...
This is for four.. unless your big eaters...lol

Ingredients:
12 Chicken thighs or appropriate amount of Breasts..(un-skinned)
1 Large Onion..thick sliced
2 Tablespoons Olive oil
4 Tablespoons Honey
2 Tablespoons(roughly chopped) Fresh Mint
2 Tablespoons slivered Almonds
2 teaspoons Turmeric
Juice of 1/2 a Lemon
Salt n Fresh ground black pepper to taste and some fresh mint sprigs for garnish.

Ok.. heat the oil in a skillet/fry pan and slowly cook the onions till soft but not to much.
stir in the turmeric for about a minute or two then quickly throw in the chicken, honey, half the chopped mint. toss it around till well coated then transfer to the grill pan...(skin side up)...it maybe an idea if you take out the wire rack and line the pan with foil....
Stick it under the heat..close as possible..
and cook for about 20-30 Min's on full heat basting from time to time then, as the chicken starts to brown reduce to low to medium heat.
Stir in the Almonds and continue till nuts are golden and chicken charred n tender.
Just before serving add the lemon juice and stir in remaining mint.
Serve with a fresh crunchy salad and Baked potato's with mustard seeds.

Baked Potato with mustard seed.
4 large potato's
30 ml olive oil
1 tablespoon coarse sea salt
4 garlic cloves...unpeeled
2oz butter
50ml creme fraiche
2 level tablespoons mustard seeds toasted n lightly crushed
salt n pepper to taste

Prick potato skins, rub with oil and sprinkle on the salt, place in baking tray and cook in pre-heated oven at 200c/gas mark 6 for 40 minutes...add the garlic and cook a further 20 minutes. Slice the tops of the potato's and scoop the insides into a warm bowl, squeeze the garlic out of their skins and add to the potato with the butter, creme fraiche mustard seeds....
Mash well and season..return mixture to the hollowed skins and cook till golden brown....
Serve....
